French Coconut Pie recipe from Molly’s Bistro Bakery

Molly’s Bistro Bakery French Coconut Custard Pie
1 cup sugar
1/4 cup melted butter
2 TBL rice flour
3 eggs, beaten
1tsp vanilla
1 tsp grated nutmeg
2 cup buttermilk
1/2 cups unsweetened coconut 1/2 cup toasted coconut
- Mix all ingredients together.
- Pour into pie crust and bake in a preheated 350 degree oven for 45 minutes – 1 hour (inserted knife should come out clean)
- Cool before serving. Serve at room temperature.
- Can be frozen (cooked)
